We are currently seeking an experienced Male Sole Chef for a prestigious 52m Sanlorenzo private motor yacht (commercially registered), with a Korean owner based in Kazakhstan and a Croatian Captain and crew. This is an ASAP start for the right candidate, with a strong focus on culinary excellence, discretion, and professionalism.
About the Role
You will be the Sole Chef on board, responsible for all culinary operations for both owner/guest and crew. The yacht will be cruising primarily in the Mediterranean. You will design and deliver refined, contemporary cuisine with an emphasis on fresh, seasonal ingredients and an ability to cater to Korean/Asian as well as international tastes. This role requires a calm, organised chef who can work independently, maintain high standards under pressure, and communicate effectively with a multicultural team.
What You’ll Be Working On
You will plan and execute all menus for owner trips, guest charters, and daily crew meals; manage provisioning and galley budgets in line with a commercially registered 52m operation; maintain an immaculate galley and food safety systems; and collaborate closely with the Captain and interior team to deliver a seamless, luxury guest experience.
Who You Are
You are an experienced yacht Sole Chef or seasoned Sous transitioning confidently into a sole role on vessels of similar size, with a solid background in high-end restaurants, luxury hospitality, or private households. You are highly organised, solutions-focused, and used to working in a compact, marine galley. You understand the expectations of UHNW principals, are sensitive to cultural preferences (particularly Korean/Asian palates), and are comfortable adapting to changing plans and itineraries at short notice. You maintain a professional, discreet demeanour on and off duty, and you enjoy being part of a close-knit crew environment with a Croatian-led team.

- Plan, design, and execute varied, high-quality menus for owner, guests, and crew, including Korean/Asian and international cuisines
- Prepare and present all meals to an exceptional standard, ensuring consistency, timing, and impeccable plating for both formal and informal service
- Manage all provisioning for food and galley consumables, sourcing the best seasonal produce and negotiating with local suppliers across the Mediterranean
- Control galley budgets in line with the vessel’s commercial registration and owner expectations, minimising waste and maintaining accurate stock records
- Maintain an immaculate, well-organised galley at all times, including proper storage, labelling, rotation, and cleaning routines in accordance with HACCP
- Ensure full compliance with food safety, hygiene, and flag/state regulations, including documentation and checks required on a commercial vessel
- Cater thoughtfully for all dietary needs, cultural preferences, and last-minute changes, adjusting menus and logistics as itineraries evolve
- Prepare balanced, appealing crew meals that support morale and energy levels, while managing varied tastes and dietary restrictions
- Coordinate closely with the Captain and interior team to align meal times, service style, and guest experiences with the overall program
- Contribute positively to a professional, respectful onboard culture, representing both the yacht and mymuybueno’s values of excellence, integrity, and discretion
- Proven experience as a Sole Chef on similar-sized yachts (ideally 45–60m) or strong Sole Chef experience in comparable high-end environments
- Professional culinary training and significant background in fine dining, luxury hotels, or high-end restaurants
- Valid STCW, ENG1 (or equivalent seafarer medical), Food Safety & Hygiene Level 2 or higher, and all standard yacht certifications up to date
- Strong experience catering for international and Asian/Korean-influenced cuisine, with the ability to adapt to specific owner preferences and dietary requirements
- Demonstrable skill in provisioning and stock control for a 52m vessel, with excellent knowledge of Mediterranean markets and suppliers
- Confident working fully independently as Sole Chef, planning and executing all guest and crew meals without daily supervision
- Excellent organisation, cleanliness, and galley management, with thorough understanding of HACCP and food safety on commercially registered vessels
- Professional, discreet, and calm under pressure, with strong communication skills and the ability to work harmoniously with a Croatian Captain and multicultural crew
- Physically fit and able to handle the demands of a busy season in a compact galley environment at sea
- Available to start ASAP in the Mediterranean, with all documents ready and the ability to commit to the season and potentially longer term
